Breakfast tacos are a delicious way to switch up your morning routine.
Our black bean and corn recipe is packed with flavour and protein.

Ingredients
- 1 can black beans, drained and rinsed
- 1 can corn, drained and rinsed
- 1 red capsicum, diced
- 1 lime
- 2 teaspoons taco seasoning
- 6 corn tortillas
- 1/4 cup coriander, chopped
- 1 avocado, thinly sliced
- Salt and pepper, to taste
- Hot sauce, salsa, red onion, crumbled plant-based feta or plant-based sour cream optional
Instructions
- In a small bowl, combine the black beans, red capsicum, lime juice, taco seasoning and coriander.
- Heat a large frying pan on medium and crisp the corn tortillas for 30 seconds to warm.
- Fill the warm torillas with the black bean mix and top with avocado and any other options you prefer.
